Blueberry and blueberry juice not only contain main dietary nutrients including minerals, sugars, and vitamins, but also are regarded as one of the most abundant and accessible sources of the bioactive components that are beneficial to the human health. Pure blueberry juice contains many of the same nutritional qualities found in raw blueberries.

Juices of berries have become very popular for people due to the consumer demand for healthy nutraceutical foods that could possibly reduce some health risks and improve various health conditions, in addition to their widespread market availability and low price.

They contain only small amounts of fat, but a high content of dietary fiber (cellulose, hemicellulose, pectin); organic acids, such as citric acid, malic acid, tartaric, oxalic and fumaric acid; certain minerals in trace amounts; some vitamins (ascorbic acid and folic acid); and phytochemicals, such as phenolic compounds. These compounds could be a good option for the food industry to use as functional foods ingredients.
