Vitamin C in lime juice

Lime is a key ingredient in chutneys and pickles from certain areas, and the juice is often used to flavor drinks, food, and sweets. Lime juices are an excellent source of vitamins C, and B6 potassium and folic acid. Because limes are loaded with nutrients, they may help boost immunity, reduce heart disease risk factors, prevent kidney stones, aid iron absorption, and promote healthy skin.

In an animal study published, lime juice and peel was shown to decrease fatty streaks found in coronary arteries. These streaks are indicators of plaque buildup and cardiovascular disease. (ARYA Atherosclerosis Journal 2013 Nov;9(6):357-62)

The vitamin C content in lime increases the body’s resistance to disease, and also helpful in maintaining the health of the teeth and other bones of the body. Taking vitamin C helped shorten the duration and severity of colds. Vitamin C also helps the body absorb iron from foods and supports the immune system

Also, vitamin C could help wounds recover faster by reducing inflammation and stimulating collagen production. Collagen is an essential protein that aids wound repair.

Lemon juice can help to reduce infections

Lemon is the fruit of the tree Citrus limon, containing citric acid. Lemon juice has multiple health benefits.

Vitamin C in fruit juice

Vitamin C is one of the most important vitamins in plant foods not only for its nutritional role in human diet but also for its high antioxidant capacity. Most fruits and vegetables contain very high proportions of water which makes them easy to squeeze or pulverize into a juice.

Depending on the fruit or vegetable from which it is made, the juice may provide some vitamin A and/or C. The vitamin C of fruits increases until just before ripening and then declares, due to the action of an enzyme, ascorbic acid oxidase.
When fruits are cooked, much of the ascorbic acid transfers from the tissue into the liquid and may be oxidised, oxidation occurring more easily in iron, copper or badly tinned vessels.

Vitamin C prevents the deficiency disease scurvy, and is particularly abundant in citrus fruits such as oranges, lemons and limes. Orange juice is the principal source of vitamin C daily intake in developed countries.

Fruit juices come to market in cans, bottles and cartons. They arrive fresh, as frozen concentrates, or in powdered forms that often contain added sugar.

Camu-camu juice

Camu-camu is a shrub native to the Amazon region of South America. Because of its sour taste it is not generally consumed as food.

Camu-camu berry is reported to be one of the richest known sources of vitamin C in the world, with around 2g of vitamin C per 100g of fruit.

It was found to have powerful anti-oxidative and anti-inflammatory properties, compared to vitamin to C tablets containing equivalent vitamin C content. Camu-camu juice contains certain amino acids that will support the immune system, as well as act as an astringent and antidepressant.

How to prepare camu-camu juice: Cover whole camu-camu with hot water. After 4-5 minutes, squeeze the fruit with hands, strain it discarding the solids, and add sugar and 1 cup water to the juice. Keep refrigerated and serve cold.

Acerola juice

Acerola is one of the few native North American plants that are cultivated for fruit on a major scale. It is widely cultivated in a commercial scale in the tropics for fresh fruit and juice. Acerola is a tropical fruit with a high antioxidant activity which may be attributed to its high vitamin C and anthocyanins content.

Acerola is commonly used for extraction of juice. The juice is extracted by breaking fruits into a mash by means of a high-speed stirrer before squeezing in a cider press. The juice obtained is clarified by centrifugation, followed by filtration and pasteurization in a tubular heat exchanger atr 88 ° C for 45 second.

Concentrated acerola juice is suitable for freezing or further processing into dry powders. The concentrated juice, while maintaining some of the properties of fresh fruits, must be frozen or further processed to prevent spoilage and nutritional degradation.

Raspberries juice

Raspberry possess the capacity to cool, to strengthen the heart, and to withstand the corrosive noxious humors of the blood in all ardent fevers.

Orange Juice and Vitamin C

There are many bioactive components present in citrus fruits, including vitamins, ascorbic acid (vitamin C), and folic acid; phytochemicals, flavonoids and limonoids; citric acid and dietary fiber.
The antioxidant capacity of citrus is attributed to vitamin C and flavonoids.

Fresh orange juice (248 mL) is a concentrated source of vitamin C, containing 50% more than a single orange.

Similarly, the antioxidant capacity of fresh orange juice is higher than that of a single orange.

Orange juice processing (pasteurization and storage), however reduces its vitamin C content (frozen reconstituted juice > chilled juice in plastic jugs > chilled juice in cartons), as well as its antioxidant capacity.

This is an important consideration because chilled juices account for a majority of the orange juice purchased by Americans.

In fact the popularity of chilled orange juice caused a marked shift in the industry in the early 1990s causing a decrease in the number of factories producing frozen concentrates and an increase in the number producing chilled orange juices.
