Bioactive compounds in cranberry juice can help prevent tooth decay

Cranberry constituents may be the source of several health benefits linked to their consumption.

Researchers at the University of Rochester have published information showing that the cranberry may be effective at preventing tooth decay.

The research focuses on the inhibiting effect of some compounds found inside the cranberry against a key bacterium blamed in the formation of cavities.

Proanthocyanidin, a chemical compound present in cranberries, inhibits the harmful bacterial from clinging to the teeth.
Proanthocyanidins, also called condensed tannins are oligomers and polymers of monomeric flavonoids. More specifically, they are polyflavans, condensed molecules of those flavonoids with a saturated ‘C’ rings.

These components inhibit acid production and protect the teeth from periodontal disease by preventing the growth of plaque.

Good oral hygiene, along with the consumption of cranberries, disrupts the pathogenic mechanism of dental caries and generally makes for good dental health.

Cranberry juice for treatment and prevention of urinary tract infection

The scientific name for cranberry plant is Vaccinium macrocarpon. Cranberries, blueberries, and Concord grapes are the only 3 fruits that are native to the United States and Canada.

Native Americans were the first to use cranberries for their medicinal properties. Cranberries were used for a variety of complaints, including blood disorders, stomach ailments, liver problems, and fever.

Urinary tract infections are caused by microorganisms, mainly Gram-negative bacteria. Indeed, Escherichia coli (E. coli) account for most cases. Treatment usually involves antibio-tics, and recurrence is a major concern.

Traditionally, cranberry juice has been used for the treatment and prophylaxis of urinary tract infections. Cranberry appears to be a safe, herbal choice for UTI prophylaxis and has relatively good tolerability.

The UTI prevention mechanism of cranberry juice is related to anti-adhesive properties of proanthocyanidins and fructose, which work against adhesion molecules of E. coli. These compounds inhibit the adherence of E. coli to tissues, thereby preventing infection.

Nutritional value of pineapple juice

The pineapple tree belongs to the Bromeliaceae family. It is the third most important tropical fruit in world production after banana and citrus. Its fruit can be processed into several products such as canned pineapple slice, pineapple pulp, dried pineapple, pasteurized pineapple juice, and concentrate.

Pineapple contains 81.2 to 86.2% moisture, and 13-19% total solids, of which sucrose, glucose and fructose are the main components. Carbohydrates represent up to 85% of total solids whereas fiber makes up for 2-3%. The composition of pineapple juice varies with geography, culture, harvest season, and processing time.

Pineapple juice contains a variety of minerals, especially manganese, as well as amino acids, various sugars, vitamins, and polyphenols. It is considered as a functional drink due to its health-promoting properties and has anti-inflammatory, antiatherosclerosis, antiaging, and many other healing properties.

Pineapple juice is obtained from crushing fruit pieces and proper physical separation of the solids. Juice must be pasteurized and packed to extend its shelf life and a preservative or refrigerated storage may be used as additional barriers to microbial spoilage.

The typical composition of canned pineapple juice (100 mL) includes 0.36 g protein, 0.12 g lipid, 12.87 g carbohydrate, and 0.1 g dietary fiber. The major minerals in fresh pineapple juice are potassium (124–130 mg/100 mL), magnesium (12–15.4 mg/100 mL), phosphorus (3.1 8.0 mg/100 mL), iron (0.2–0.31 mg/100 mL), and manganese (0.3–0.99 mg/100 mL).

Manganese, a trace mineral instrumental to the formation of bone, as well as the creation and activation of certain enzymes. Pineapples also include copper (around 0.313 mg/100 gm juice), another trace mineral. It assists in the absorption of iron and regulates blood pressure and heart rate.

Pineapple juice is rich in vitamin C (ascorbic acid), an effective antioxidant. Ascorbic acid or vitamin C fights bacterial and viral infections which is an effective antioxidant and helps the body absorb iron. The vitamin C content of fresh pineapple juice is reported to range from 9.2 to 93.8 mg/100 mL.

Half a cup of pineapple juice provides 50 percent of an adult's daily recommended amount of vitamin C.

Major free amino acids identified in the pineapple juice include asparagine, proline, aspartic acid, serine, glutamic acid, tyrosine, valine, and isoleucine.

Pineapple juice also contains sucrose (4.1 g/100 mL), followed by fructose (2.5 g/100 mL), and glucose (2.3 g/100 mL). Sugar content as soluble solids in the juice not just function as sweetener and also play role in appearance, texture, freezing point, fermentation, preservation and antioxidant activity.

Lycopene in watermelon juice

It’s not difficult to prepare watermelon juice. Just scoop watermelon and put into a high-speed blender and blend for 20 seconds. Then serve.

Study shows that watermelons has numerous health benefits. The red variety of watermelon contains high concentrations of Lycopene, an anti-oxidant that helps to reduce the risk of many diseases.

Majority of the watermelon is being sold on the basis of sweetness but presently, ruby color imparted by lycopene is also a convincing factor.

Lycopene, a red-pigmented carotenoid with antioxidant activity has been associated with a lowered risk of prostate, digestive tract, bladder, breast and cervical cancers, as well as with cardiovascular disease.

The lycopene activity in the body depends on its molecular and physicochemical properties and site of action within cells. It acts as singlet oxygen and free radical quencher.

It has been observed that consumption of 20 mg/day of lycopene from fresh frozen watermelon juice, resulted in a 100 to 200% increase in human plasma lycopene, thus showing that lycopene is bioavailable from non-heat processed watermelon.

Grape juices: Composition and health benefits

Grapes belong to the world’s largest fruit crops and is one of the most diffuse fruits in the world both as fresh fruit (table grape) and processed in wine and grape juice.

The composition of grape juice is similar to that of whole grapes except that crude fiber and oils, which are primarily present in the seed, are removed. Sugars, acids, methyl anthranilate (in Vitis labruscana), volatile esters, alcohols and aldehydes are major flavor constituents. Glucose and fructose are the major sugars present in grape juice.

Grape juices may provide some of the same heart benefits of red wine, including:
*Reducing the risk of blood clots
*Reducing low-density lipoprotein (LDL, or "bad") cholesterol
*Preventing damage to blood vessels in your heart
*Helping maintain a healthy blood pressure

The methods for the grape-juice preparation are very different to the varieties used and local traditions. In general, the main steps in juice preparations are destemming, crushing, depectination, pressing, pasteurization, setting, and filtration.
